How to obtain the perfect sanitisation with our dishwashers?

The sanitisation of dishes is an important issue, even more in this period in which we have to face the COVID-19 pandemic.

The Coronavirus belongs to the group of encapsulated viruses that cause mostly mild cases of respiratory and intestinal infections in humans.
As an encapsulated virus, this new pathogen does not appear to be more resistant than all other encapsulated viruses when exposed to disinfecting agents, besides its specific thermal resistance is as yet unknown, as it is of all other Coronaviruses. On the contrary it can be assumed that Coronaviruses are sensitive to the exposure to temperatures of 60°-70°C and to active chlorine alkaline detergents.

The sanitisation of dishes washed in industrial machines in achieved using high temperature water (85°C) during the rinse phase.

The operating temperatures and wash cycle times in the machines have been configured by factory default in order to consent the correct sanitisation of dishes. This means we can assure you that the exposure times to the water and the wash and rinse temperatures are effective in eliminating the presence of grime and germs on the dishes.

All Aristarco dishwashers are compliant with the DIN SPEC 10534 regulation, so as to guarantee the correct washing and sanitising of dishes.

WHAT TYPE OF SAFEGUARDS CAN ARISTARCO DISHWASHERS GIVE YOU?

THERMOSTOP SYSTEM: THE RINSE WATER SAFEGUARD
The heat arrest option or namely the Thermostop System is available in all Aristarco glasswashers and dishwashers: the dishwasher will not start the rinse cycle until the suitable rinse temperature has been reached (85°C). The machine continues with the wash cycle until the water in the boiler reaches the temperature which has been set to carry out the rinsing.

PRS SYSTEM: AN ACCURATELY MONITORED RINSE FOR OUTSTANDING RESULTS WITH ZERO WASTE
The premium rinse system, available only in the electronic PRS models of all ranges, consists in the combination of the atmospheric boiler (in 316 AISI stainless steel), the break tank and the rinse pump. This system allows the dishwasher to NOT depend on the pressure of the water supply, therefore, making it possible to function perfectly well with only 0.5 bar.

Technical advantages of the PRS System
1. The system excludes the intake of cold water into the boiler during the rinse phase, hence ensuring a constant high temperature for the entire duration of this cycle;
2. The rinse pump guarantees the ideal and constant pressure to the nozzles for the entire rinse phase;
3. The boiler made of AISI 316 stainless steel provides extreme durability and maximum hygiene;
4. The atmospheric boiler may be emptied during extended periods of inactivity in order to avoid stagnating water and limescale build-up.

Benefits of using the PRS system
1. Complete and guaranteed sanitisation of the dishes in every condition;
2. Thorough removal of residual detergent;
3. Fast drying dishes;
4. Zero waste: consistent and wise use of water and rinse chemicals.

HD SYSTEM: THE WASHING TEMPERATURE SAFEGUARD
In the machines with 400V 3N voltage, it is also possible to activate the HD (Heavy Duty) function which makes sure the operating temperatures are maintained even during intensive use, by having the boiler and tank elements operate at the same time. The HD function warrants exceptional washing results due to operating temperatures set as default standards by the manufacturer in an arrangement to maximise performance and to minimise the use of chemical products.

CLOR-DET DETERGENT: THE DISINFECTING POWER OF CHLORINE
Liquid detergent with active chlorine for the automated washing and sanitising of plates, pots, glasses and dishes in general. It is not to be used in combination with acid-based rinse aid (NO HARD-BRILL). As recommended by the National Institute of Health (ISS), chlorine is one of the few chemical elements which acts effectively in sanitising items exposed to Coronavirus. It has a sanitising and whitening action at the same time. It doesn’t act in conditions of hard water (maximum hardness 15°F) as the performance of sequestrants is inhibited. This detergent is recommended in the presence of unpleasant odours, polluted water or where a product with a sanitising effect is required, for example for the automated washing of dishes in shopping centres, community events, hospitals, canteens and nursing homes.

SANITISING IS A KEY CONCEPT
To ensure thorough sanitisation, Aristarco offers you products that guarantee high temperature washing and rinsing, suitable when used in the proper manner, to accurately wash and sanitise dishes; our advice and suggestions which lead to the correct washing and sanitising of dishes are:
1. Change the tank water following each work shift;
2. Carefully clean the inside of the machine with a cloth and neutral detergent at the end of the workday. Make sure all traces of grime are removed from the inside walls of the machine;
3. Remove and clean the filters of the wash tank;
4. Carry out the same operation with the washing/rinsing arms, making sure the spray outlets are free from impurities and grime;
5. Periodically check the levels of detergent and rinse aid in the tanks which supply the machine.
